ADAMS — The state Department of Health fined China Wok $350 for several repeated violations.

Department staff members noted that during a routine inspection of the 5 Liberty St. restaurant in June, there were inadequate hand-washing facilities, the hand-washing sink was inaccessible and there were buckets on the floor in front of the sink, according to paperwork obtained through a Freedom of Information Law request. The establishment paid a $100 fine for those violations.

China Wok owner Shu Yan Shang also had to pay five $50 fines because food in the preparation area and walk-in cooler was not protected from contamination, its floors were not in good repair, no screen was provided on the back door to help prevent the entrance of vermin, ventilation filters were soiled with grease and dust particles, and there were no plugs in the three-compartment sink.

According to those documents, all violations were repeat infractions.

During the department’s monthly June inspections, it also fined the Tug Hill Inn, Lowville, $100 because gravy was not fully protected from potential contamination.
