Young chef on her way to achieving her dream


PAUL SMITHS — Eighteen-year-old aspiring pastry chef Lindsey M. Remington of Lisbon took home the top prize at a cooking and baking competition at Paul Smith’s College.

Miss Remington, along with 32 other students from across the country who will attend Paul Smith’s College this fall, took part in the event Saturday.

During the three-hour competition, Miss Remington demonstrated her baking prowess by poaching a pear, caramelizing apples, rolling out and baking cookie dough and decorating a cake.

“I loved it,” Miss Remington said. “I don’t find it stressful at all. In fact, I find baking relieves a lot of stress for me. I plan on attending school there in the fall, so it also got me used to the campus and equipment.”

After the grueling competition, which had her vying with some of the most talented culinary students in the country, Miss Remington said she was surprised when she was named the winner.

“I was actually really shocked,” she said. “They announced the winners from fourth to first. The anxiety just started building up. When they said I got first place, I was in shock and I was happy. There was so much emotion. Part of me wanted to cry and part of me wanted to hold myself together.”

She was the only student in the culinary program at the St. Lawrence-Lewis Board of Cooperative Educational Services’ Northwest Tech, Ogdensburg, to take part in the competition.

Her BOCES culinary teacher, Stephen C. Putman, said he is not surprised Miss Remington did so well in the competition.

He said she came to the technical education center’s kitchen during Christmas break to practice.

“She came in for a whole day and stayed late others,” Mr. Putman said. “She also stayed here for the whole day — from 8 a.m. in the morning until 4 p.m. She takes opportunities when she sees them. It’s rare to get a student that wants to put that much effort into school, but she is not afraid to put the time and energy into becoming better each day.”

Mr. Putman, a chef who has worked in some of the best kitchens in Northern New York, said Miss Remington has what it takes to succeed in a career in pastry arts.

“Lindsey is self-motivated and knows what she wants,” he said. “Those are the kids that are going to succeed in the culinary industry. She is going to encounter long hours in a hot, fast-paced and hectic environment. You have to be motivated and want to succeed.”

As the winner, Miss Remington will receive a $7,000 scholarship for each year she attends Paul Smith’s for up to four years. She also received a chef’s knife kit and baking supplies valued at more than $600.

Miss Remington said she started baking at a young age while participating in 4-H.

“I was basically giving public presentations on baking and decided that was what I really wanted to look into as far as a career,” she said.

Miss Remington said she is now one step closer to achieving her dream.

“I would actually like to open up my own bakery in the area and start out small and gradually start bigger,” she said.

Northwest Technical Principal Jane S. Akins said she is very impressed with Miss Remington’s work since she first showed interest in attending Northwest Tech, 100 Park St., as a high school freshman.

“Lindsey knew early on what she wanted to do and has been a rising star right from the first day she came here,” Mrs. Akins said. “She always has a smile on her face and is always happy to be here.”
